Caciotta
This name is given to a wide range of cheeses produced bothindustrially and in dairies. Made of sheep's or cow's milk or a mixture of the two, sold in round wheels weighing less than one kilo and only slightly ripened, the cheese generally has a delicate flavor, few or no holes, and is white or yellowish in color. The crust is thin and ranges from light to darker yellows.
